Simple Roast Chicken (Thomas Keller)

My go-to chicken recipe for decades. High and dry heat (no veggies in there making steam!) it is SO easy and never disappoints. The crispy skin is perfect. I don’t truss because I’m lazy and I don’t ever remember to baste with thyme. While it rests I make a pan sauce by deglazing the pan with wine/beer/cider/broth/vermouth/whatever liquid I have, stirring in choppped shallots and once thickened, whisking in some Dijon mustard. You will not regret it.

I love a braised or low and slow meat situation for a party. They can be so impressive on flavor while not being very high maintenance right before ppl arrive. This Bo ssam is easy and fun, and if you have a rice cooker, you can do all the heavy lifting early. The only thing to do right before eating is crisp up the top. Go wild with condiments and kimchis and pickles!

Maybe you want to bring some form of veggie but need it to travel/keep well. Nothing beats a basic French grated carrot salad! I don’t use a recipe, but this one looks great. A box grater or cuisinart works. I like to add dried currents. Chopped herbs, pistachios or hazelnuts if you feel fancy.
