Outside of the box potato dish recs/ideas please! Headed to a potato themed party at the beach (7th annual) in a couple weeks and I’m stumped on what to make that’s not the typical potato dishes. There will be a potato appetizer competition and I’m competitive! 😅 My brain can only think of potato salad, fried potatoes, mashed, baked etc…but I want to make something different, unique…

Controversial opinion: I am not very interested in potatoes. The exception is when they are in a savory pancake and then I am very, very interested. This gamjajeon is A++.

I’ve never made this but I’ve made a zillion Swiss potato rostis. My tips: never give in to the temptation to use fancy little potatoes. You want big old supermarket Russets. Also after shredding wrap the potato mass up in a tea towel and squeeze out as much water as you can.
