Does anyone have a great corn muffin recipe? Like the ones they use to sell in late 90’s bakeries and supermarkets all over New York/Long Island!

Trader Joe's Cornbread Mix: I'm lazy and use this mix. For a savory version, I add in extra corn, sometimes jalapeños (pickled or fresh), cheddar, whatever you like. For a corn "cake" I line the pan with turnbinado sugar and serve with fresh strawberries or roasted strawberries. So yummy!
