King Arthur Potato Bread: I find most homemade rolls to be great the first day but dry/ dense/ crumbly the next. I don't need that when I'm trying to enjoy the best part of Thanksgiving which is leftovers. Here's the deal: you make a batch of this, but instead of 2 loaves you make 1 loaf and make the other half of the dough into 12 rolls. You have perfect rolls for dinner and perfect bread for turkey sandwiches later. This bread also makes the best French toast on earth.

STRAWBERRY JELLO WITH BERRIES IN IT: My mom is so mad that I am saying this because she has been trying to get it off our family's menu for years BUT I WILL NEVER LET IT HAPPEN. Make strawberry jello except for half of the required water use OJ then add frozen berries (they don't need to be tho) and refrigerate. It is refreshing, has great mouth feel, feels nostalgic, and generally is just FUN. It is always a hit, Sorry Sue, but you will never be free of this beautiful unpretentious goofy ass side.

Eric Kim’s family broccoli, cheese, & rice casserole: This is neither fancy, nor is it particularly traditional (to my Thanksgiving table at least). But it is so, so good. Even as I’ve pared my typical feast back, this has remained by popular demand. I use homemade garlic broth to cook the rice in because I think it adds something (and adds enough labor to make it feel more Thanksgiving, lol), but rest is exactly as written.
