Homemade Dunkalatte a.k.a. Dunkagänger

Yes, I did, in fact, engrave a pitcher with measurement demarcations so I can easily scale the recipe and make it a half-gallon at a time 🫣 Anyway, we were spending too much on Dunkalattes so I found this recipe online somewhere, which comes very, very close to matching the Dunkin’ version. My wife prefers this one, while I love all god’s children. Ingredients 1 T instant espresso (any, but I use Nescafé) 4 oz hot water 16 oz milk 5 T Autocrat coffee syrup (maybe others work? But I tried Eclipse and it was wrong) Instructions Add the instant espresso to the hot water and mix. Combine everything, stir well, pour over ice WARNING: we haven’t saved any money because now we just drink more Dunkagänger than we ever drank Dunkalatte, so financially it’s a wash and diabetes is coming for us faster than ever.

“Butter” Your Grilled Cheese with Mayo Instead

I mostly do this because it’s sooo much easier to spread, especially on soft bread, but it’s arguably (subjectively) better in every way. BONUS REC: level up your hotdog game by getting New England style buns, lightly mayo the outside faces, and grill ‘em.

Throw in half a tub of baby spinach

Hate veggies but love pasta and stews and stuff? Throw in half a tub of baby spinach at the very end. You’ll barely notice it (I promise!) and you’ll eat at least one green thing today. Heck, sometimes you can throw in the whole tub and the dish is none the worse for wear.

Mark Bittman’s Spaghetti and Fried Eggs

This might be the ultimate low-effort-high-reward dish. Who knew so little effort could produce such decadence? Important tip: make sure you don’t overcook the eggs, you want the yolks to still be runny when you dump in the pasta so they make a silky sauce instead of egg chunks. Don’t get me wrong, if that happens you’ve made spaghetti with scrambled eggs instead, and it’s still so yummy, but not quite as divine as when you nail the timing. P.S. If you need to pretend it’s healthy throw in some token baby spinach when you add the pasta to the eggs.

I had two pretty significant stretches of depression/anxiety in my life. The first sorted itself out over the course of a year so when the second hit I thought it would do the same, but it just went on and on. I resisted getting on meds for too long because I thought they’d make me not myself. Eventually I couldn’t keep my head in the sand anymore so finally gave in to loved ones’ urging, and as usual they were right. Took a bit of doing to zero in on the right dose but what I’ve come to understand is that the SSRIs have helped me feel like myself again. It was the depression and anxiety that was making me not myself. Just putting this here for anyone else operating under the same misconception. Ymmv, ofc!

Raised Waffles

We were sleepover-famous among our kids’ friends for these waffles. It’s crazy that the waffle GOAT was originated by Fannie Farmer in 1896 and then perfected by Marion Cunningham in her 12th edition rewrite of the Fannie Farmer cookbook in 1979 and hasn’t been challenged since. I’ve linked up MC’s Epicurious version but these are the instructions I give when friends ask for the recipe: Ingredients ½ cup warm water 1 package active dry yeast 1 stick butter 2 cups milk 2 cups flour 1 teaspoon salt 1 teaspoon sugar 2 eggs ¼ teaspoon baking soda Steps #1 In a large bowl, put the yeast in the warm water, and let stand for five minutes (or just while you complete steps 2 and 3, roughly the same thing). #2 Melt the butter in a pot. #3 Add the milk to the pot and stir it around until warm. #4 Pour the milk-butter mixture into the yeast-water mixture and add the flour, salt, and sugar to it. Mix it up. It will be kinda watery; don’t worry. #5 Cover with plastic wrap and let stand at room temperature overnight. #6 In the morning add the eggs and baking soda, stir it up, and get waffling! Important Notes Steps 1-5 you do the night before! You need a regular waffle iron, a Belgian waffle iron won’t work! The finished batter keeps well in the fridge. I double the recipe and then we eat ‘em all week. Shake the batter on subsequent days before use and it’s good to go.

Decades, DECADES, I wasted buying whatever cheap-ass pasta and thinking it didn’t matter when I could have been buying this instead. I am a bad Italian. Superior texture, holds sauce better, bigger al dente window, available in regular ol’ supermarkets (or at least Big Y).

Pancakes for the Table (PFTT)

At breakfast, ordering pancakes for the table is a game-changer! Everybody can get their own savory entree without suffering from sweets-fomo, and you can also then actually do something with the rest of your weekend because you had a reasonable portion of pancakes instead of a coma-inducing portion.
