This is so good, nourishing, and a full meal if you tear handfuls of tender greens into the top of each bowl (I normally grab a box of protein greens - add to individual servings so the greens don’t get slimy). A must-cook for me when the temp drops. If you let the rice cook a little longer, it turns into a luscious congee-adjacent consistency.

I was late to this (I think it broke the internet at some point, as they say) but I've been making it for years now and it really is just such a hit. I crave it as soon as we have the first cold day of fall and make it regularly. The yogurt/sour cream and mint on top do indeed take it home. Sooooo easy to make. The first and only thing I felt confident cooking for other people for years!

Everyone I’ve made this for asks for the recipe. The sauce is sooo good I crave it. And with most of this made in a sheet pan and very little chopping involved it couldn’t be easier! Nisha also has incredibly thoughtful meal prep plans that map out weekly meals, and all her recipes are approachable, delicious and healthy.

AB can do no wrong as far as I’m concerned and this soup is no exception: so comforting, tasty and easy. It’s great as it is but I’ve also added a spoon of miso or some MSG into this to oomph it up. The NYT Cooking comments never disappoint and there are great suggestions here for adding beans etc to bulk it up.

Beetroot & ginger porridge/oatmeal

This was suggested to me by my angel friend Ruby. Blend the cooked beetroot until smooth, then add it to your pot of oats with ginger, honey, and the liquid of your choice (water/milk). I lightly toasted my oats in extra virgin olive oil (!!) first based on a wilddddd suggestion from @amelia! Sounds rogue but I'm a convert. Simmer until your desired texture is reached. Top with your favourite toppings! In this pic I've added puffed millet, coconut flakes, pepitas and walnuts. SO YUM.

Sauté sliced mushrooms & kale in an oiled pan on medium-high heat Add a tiny bit of butter for extra (optional) flavour & season to your liking Whisk 2 eggs through a sieve into a lightly oiled pan on medium-high heat Shake the pan to loosen the eggs a little, then when they begin to cook (this will happen quickly), begin gently folding with a spatula Remove the pan from the heat just before the eggs are cooked to your preferred liking (they will continue cooking once removed from the heat) Top with crispy chilli oil & spring onion

Braised Beans with Burrata (Dinner: A Love Story)

One pot, more like plopping things in than prepping. Will make any Lima bean skeptic a convert (including me!). Simple, but fancy enough for a dinner party. Simmering the beans is the most time-consuming part but I like to hang with a glass of wine while I scoop off the foam. Just as good with grated Parmesan if burrata feels like too much.
