    “Just add 2% salt of the weight of your tomatoes, cover with something (I used baking paper) and let sit for a couple weeks. The salt draws out the liquid in the tomatoes making for a much more flavourful brine! I've used mine to make fermented ketchup (great! tangy!), next I'm using the brine in salad dressing :)”
