Cabbage, Potato and Leek Soup Recipe

We don’t make this a ton but it’s surprisingly good and is a great way to deal with a lot of cabbage. I recommend reading the first few comments - the biggest challenge of this soup is caramelizing the cabbage (because there is a lot of it). If you use a standard pot it can be hard - I use a shallow dish with a large base (like a braiser). Otherwise this is easy peasy and delish.

Turkey cabbage crack

This is my aunt’s recipe, but it works…1lb of ground turkey, same amount of shredded cabbage. Brown the turkey with soy sauce, sesame oil and fish sauce or oyster sauce (this is very loose)…when it’s cooked, add your shredded cabbage, maybe some scallions, definitely more of your sauces, rice vinegar and siracha (if you like heat)…let that cook down. You can top with a fried egg, and/or ramen, or rice and scallions…cilantro? Like I said…it’s loose, but quick and yummy.
