Italpizza frozen cheese pizza

We picked this up on vacation as a “just in case” snack/meal and boy did it surprise. Unlike American products, this pizza brand seems to understand that you don’t need 1,000 stabilizers to make a simple delicious pizza. The white cream sauce is a dream. Is this going to replace a traditional wood fired pizza? No. But it IS the best frozen pizza I’ve had. The crust is surprisingly good.

Fast and foolproof pancakes

I would consider myself pretty good at pancakes - lots of experience cooking them and eating them. I would also consider myself someone who is no fuss when it comes to breakfast. When I want pancakes I want them NOW. No, I didn’t think ahead and start a sourdough rise last night! My friend Lauren has some banger recipe recommendations. This is one I requested after she made these flawless pancakes for me on two separate occasions and it’s been stored in my phone ever since. I thought that Apple deleted stuff after 3-6 months but this has been searchable in my messages for 3 years now so even Apple knows what’s up. They are quick, easy, and fluffy af. Don’t add the milk. The batter will seem scary thick, don’t fret. ps. I am a serial omitter of unnecessary sugar in recipes but turns out that it has a purpose so don’t skip it!

Cabbage, Potato and Leek Soup Recipe

We don’t make this a ton but it’s surprisingly good and is a great way to deal with a lot of cabbage. I recommend reading the first few comments - the biggest challenge of this soup is caramelizing the cabbage (because there is a lot of it). If you use a standard pot it can be hard - I use a shallow dish with a large base (like a braiser). Otherwise this is easy peasy and delish.

Red Curry Lentils With Sweet Potatoes and Spinach Recipe

This is a relatively new one to our household but us quickly becoming a weekly staple. I like it because it’s good on the first night and obviously better every day after. It’s one of the only leftovers I look forward to. We serve over rice and without the spinach. A dollop of yogurt is a nice add but not necessary.

Massaged kale, tempeh sautéed with balsamic, goat cheese, nut of your choice (hazelnut, pistachio, pepitas are our fave)

Add some oil and balsamic vinegar (we like the Napa valley 25 stars as it’s less acidic and a bit thicker, but not quite a full reduction) as a dressing and toss. It can be a full meal!

Cherry tomato, red onion, basil, oil, crumbled blue cheese

Recently made this as a topping for some corn fritters. Loved it. I just winged it by cutting up the cherry tomatoes (some in halves, some quarters, some smaller), threw in some diced raw red onion (not too much, but for some crunch and contrasty flavor), added some chopped basil, then added a small to moderate amount of good blue cheese. Stirred around, let sit for 30 mins and served. It was very well received and felt fancier than the effort that went into it.
