Cabbage, Potato and Leek Soup Recipe

We don’t make this a ton but it’s surprisingly good and is a great way to deal with a lot of cabbage. I recommend reading the first few comments - the biggest challenge of this soup is caramelizing the cabbage (because there is a lot of it). If you use a standard pot it can be hard - I use a shallow dish with a large base (like a braiser). Otherwise this is easy peasy and delish.
