This is really tasty, easy and can keep in the fridge for a few days without getting sad/soggy. It's got lots of yummy veggies, but also enough other stuff to be your workday lunch. I've enjoyed some crumbled up pita chips in mine.

Well if you live in Chapel Hill or Carrboro you almost certainly already know about this gem of a restaurant, but if you have somehow missed it you gotta go!! It’s so cozy and the food is perfect. If you aren’t stuffed by dessert those are really good too. I once ate a very delicious, slightly salty ricotta ice cream with chocolate chips here that I still think about often. If you happen to be throwing an extremely cool and intimate party or wedding reception it’s perfect for that too (was lucky enough to attend a buddy’s wedding celebration here a few years ago and it was 🔥). Also the focaccia is served with olive oil AND butter. If you’re not sold on this place after all that then you’re hopeless.

Lazy Lasagna

This is so yummy, cozy and (most importantly) EASY to make. It's become a big go-to for me as I do not like to use much brainpower to make dinner on weeknights. It's one of those magical true one pot recipes (unless you make your own marinara sauce, which you really don't need to). It's fairly quick, but most importantly it's simple and doesn't require me to consult the recipe every 3 minutes. I like to add some spinach and I have also found that if you forget to buy one of the cheeses it still turns out delicious.

Chicken Caesar Salad

In recent years I have become a Caesar salad superfan. I feel like all sorts of salads can be hit and miss at restaurants and Caesar seems to be especially commonly bungled. I really like making my own at home and find them to be SO delicious and satisfying for lunch or dinner. I really like this smitten kitchen recipe as a general guide though I will say I have a few alterations when I eat it at home. I don't REALLY think it needs cheese (it's already so delicious and flavorful). I have icky feelings about fish so I don't put anchovies, but I have found that putting fish sauce in instead of anchovies is delicious, easy and still gives that super umami-ness that a good Caesar dressing needs. My other strongly held belief about dressing is that you have to do it by taste/with your heart and the amounts in the recipe are more of a guide than a rule (I will totally put 4 cloves of garlic into my dressing). Also, if you're not already making your own croutons this is your sign to start! They really are better and (unlike some cheffy things) are really easy and quick to make.

Chicken Thighs With Tomato, Orzo, Olives, & Feta

I really love this one! I am not trying to work or think to hard about dinner on weeknights and this recipe really delivers on being low effort and high tastiness. I don't love olives so I skip them, but there are plenty of wonderful briny things in here to make it taste great (tbh I probably add way more capers than the recipe calls for and I strongly recommend that approach). I also think it works well if you add some greens. I usually make a ton and don't get tired of eating it for at least 2-3 servings of leftovers.

FatBoy Ice Cream Sandwiches

My little brother turned me onto these. I had my first one ever right outside Great Basin National Park (which could be part of the reason I love them so much). I was really never a big fan of the grocery store version of ice cream sandwiches, but these really hit the spot. They’re just like an ever so slightly elevated version of the basic ones. The ice cream is very rich and creamy. They are a perfect and satisfying treat.

I am a key lime pie enthusiast and I am PICKY about my key lime pie. The most important factor is that it has to be TART! I have had far too many key lime pies that lack this essential element and they are sad!! This pie is consistently perfect AND it is huge. Why didn’t anyone tell me before that Key Lime Pie could be the height of a cheesecake!?! It’s genius! As a an extra bonus they will sell you a whole or half pie that you can enjoy all week while you’re on the outer banks. I have never actually set foot in this restaurant or tried anything else from them, but please don’t sleep on the pie. This pie was my birthday cake this year.

Saag Feta

This is SO GOOD! I am a long-term lover of Saag/Palak paneer, but I think the addition of feta makes it even more delicious. The briny funkiness of the feta really makes this dish a lot more exciting and flavorful. And I think kind of contrast nicely with the richness of the spinach gravy so it ends up tasting brighter than saag paneer. It’s not super hard to make which I find to be delightful because it tastes like a very delicious and exciting dish. Also Priya Krishna is amazing in general.

WEDGE SALAD

This is quite possibly the best salad and that is coming from someone who really loves salads. I also LOVE blue cheese. This dish has it all - the crunchy, watery iceberg lettuce, bacon (speaks for itself), and funky, flavorful cheese. Just a genius combo. I order one almost every time it’s on a menu, but I think it’s a particularly perfect summer salad. The crunchiness is so refreshing and is a perfect contrast to the richness of the dressing. I personally think more blue cheese is always better so sometimes I put extra crumbles on top or just use significantly more blue cheese than the dressing recipe calls for. I think toasted almond batons are great on this too (especially if you’re not a bacon person). I’ve put a tart apple on too with tasty results. I am trying to turn these into a thanksgiving tradition at my house too. I can’t ever get enough wedge salad!

Pizzeria Mercato

This is my FAVORITE restaurant in Carrboro!! Which is not a huge place, but has many great restaurants. I would say it’s my top pick in Orange County at least (maybe the whole triangle). It has the best food, the warmest vibes, the most lovely staff and very tasty Lambrusco. I can’t say enough great things about this spot! I will say that if you take this rec DON’T only order pizza. If you think of this as strictly a pizza place, you are missing the point. The pizza is wonderful, but ordering appetizers and possibly dessert is essential to having the full Mercato experience. They are very serious about getting amazing vegetables and they do magical things with them. I’ve had some of my favorite salads ever here (s/o warm shelling beans salad and winter lettuce salad). This menu has some old standbys, but also has a lot of movement which is nice and especially great if you find yourself becoming regular. The desserts are excellent too. The lemon custard cake is one of my all-time favorite desserts (I actually got engaged next to a lemon custard cake). Their budino is also legendary. Did I mention that it’s not extremely expensive though it feels like a really fabulous restaurant??? OK, I will shut up now, but you guys should all go here!

This is the best Mexican food truck in Carrboro! It’s probably the best food truck in Carrboro period (though when the Ethiopian truck comes to town it gets a run for its money). I don’t think I’ve ever had anything here that wasn’t delicious, but the tacos are particularly perfect. I am also a big fan of the tortas. It’s got a great vibe with picnic tables, music and a year round fake Christmas tree.

Porto Tonico

I discovered this drink on a recent trip to Portugal and found it absolutely delightful. I am not a huge fan of Port because it’s super sweet and I just don’t have a taste for sweet alcohol very often, but this is a very good drink. It’s sort of like a gin and tonic, but different somehow and maybe even more summery? The tonic balances the sweetness of the port nicely. It probably doesn’t hurt that I had my first one on a sailboat in Porto, but I found that it was delicious even in less scenic location.

Panzanella Salad

This is the best food! Like it truly might be the best bite of anything you could put in your mouth. I think I love it even more because you really can only eat it for a few months every year and then you totally need to forget about it (probably obvious but do not attempt this outside of tomato season). To me this is summer (and joy) in a bowl.

🍍 Adding canned pineapple to smoothies 🍍

OK, so I historically have really loved smoothies, but in recent years I have had trouble trying to make one that doesn’t taste like nothing. It seems like even if you use good frozen berries and milk or even if you use a bit of fruit juice it just tastes kind of bland and sad. Recently, I have started adding canned pineapple (with some of the juice) and it feels like a game changer!! It sort of turns every smoothie into a cousin of a pina colada, which is magical. My recent go to “recipe” is canned pineapple, frozen banana and mango, milk and plain Greek yogurt. It’s delicious!

Grapefruit Sparkling Cold Brew

This drink from Open Eye Cafe is shockingly good! Something about the citrusy-ness with the cold brew becomes magic in the glass. So delicious and refreshing especially if you want something that drinks lighter than a latte. My husband says it’s best consumed while sweaty. I can’t fully do it justice in words so you’ll just have to trust me and go get one.
