A favorite in our household. Far be it from me to mess with one of Deb’s recipes, but one can cut the cooking time in half by making the onions separately from, but simultaneously to, the lentils and combining them just before putting the casserole in the oven. (Also, I am a big fan of adding a little water to your onions while sautéing, which softens them faster and deglazes the pan so you can get to that caramelized flavor faster.)

Perks of frozen edamame: 1) no utensils required 2) kids get to shell the beans themselves—a sensory experience! 3) they taste salty and delicious but aren’t potato chips.
