The most reliable cake layers out there. You can make them the day before and wrap them up and put them in the fridge or make it the week before and wrap them in the freezer and thaw and frost and go! Delicious, easy, and low maintenance.

The absolute best cookie of my life. PLEASE let sit in fridge for 24-48 hours before baking, which might sound annoying but it’s SO worth it. The dough comes together quickly and then when it’s actually time to bake you have the dough ready to rumble!! Life changing to add toffee, or nuts too.

If you’re waiting for oatmeal to cook on the stove in the morning, also steam up some veggies! especially in summer cooking is so sweaty and can be bothersome so having cooked veggies ready to get thrown together for a lunch of your dreams is a gift to your future self. See the lunch pictured! 5 mins to actually prepare, but with veggies ready in the fridge, a salsa verde, feta, and fermented chickpea salad alllll the flavor is easy access. Also I had steamed, peeled, and cut up those beets with red wine vin, oil, s&p, and a thinly sliced onion while cooking dinner the other night.

Summer sheet tray for ripening fruit

Ever had peaches mold before they ripen??? No more! Also great if you’re picking tomatoes at or around “first blush” to let them finish ripening inside. Once the fruit ripens it will entice you like sirens singing to you, and you’ll smell them before you need to squeeze and bruise them.

Instant pot everything

Genuinely if my friends don’t use their instant pot multiple times a week I have not done my job!!! Cookings chicken thighs or breasts with a big cup of water and salt, diaspora garlic powder etc etc for 8-10 mins gets you cooked chicken for salad, burritos, to throw into a pasta sauce or soup and now you have good broth too! Dried beans with water, oil, salt, aromatics (Sage, bay leaf, dried peppers etc etc etc). Cooking grains for a salad or base of dinner. Cooking potatoes with a steamer basket for 8-12 minutes based on size. Making yogurt! Genuinely my instant pot is ride or die in the kitchen.

Pre-Grocery Reset

Nobody likes spending $$$ on groceries and nobody likes throwing away food! Here comes the pre-shop reset. Before you make your grocery list, right when things start feel almost bare and undesirable in the fridge you need to do a reset. The KEY is to do it during the time you plan to cook dinner and do an EASY but delicious dinner because the reset will take time and make lots of dishes so you don’t want dinner to also do that. Take everything out of the fridge that’s looking floppy, sad, and even a bit moldy and put it on the counter. Take stock of what’s salvageable, what’s compost, and what needs a little imagination. Today that was turning sad herbs, and a last couple anchovies and capers into an Italian salsa verde, very pathetic rhubarb into compote, parm that was poorly stored into the food processor to make it crumbled and ready to be used with abandon (rather that the hard and sort of moldy situation it had been), a couple potatoes that were not their best anymore cooked in the instant pot, then a pot of beans! Also prepped celery and carrots and plopped them in water so they perk up and are easy to eat as well as washing and spinning greens so they are salad ready. Tomorrow I will feel like there’s lots of food to eat! And tonight we had an easy zhuzhed up jarred pasta sauce on penne and salad. The fridge and our minds are ready for making a grocery list and very little had to go into the compost.

Homemade Ice Cream

So worth it, and makes it feel extra fun. I saved all my allotted spending money for quite a few months to splurge on a ridiculously fancy ice cream machine and have zero regrets. (Musso 4080 for those interested...) The Ben and Jerry's recipe book is honestly one of the best and easiest books for ice cream. All of your favorites are in here!
