Grow your own herbs
•••
Herbs taste good, and if you always have them on hand, you’ll use more of them. If I’m making something that uses a ton of one herb I’ll still get them at the store, but since I started growing my own I’m way more likely to use them in more dishes. A sprinkle of chives here. A sprig of rosemary there. Grow your favorites and/or the ones your grocery store never seems to stock.

Turn your food scraps into stock
•••
I fill a freezer bag of food scraps, and when it gets full I boil it all in a big pot for an hour or so, season with salt or soy sauce, and strain it into jars and ice cubes trays to freeze. Homemade stock is better and cheaper than store bought, and you can use it place of water for many savory dishes. I sometimes see recipes call for specific ingredients, but I always use what I have around and it always works out. I think any of these in any quantity are fair game: -Onion -Carrot -Garlic -Celery -Mushrooms -Ginger -Tomato -Lemongrass -Apple -Herbs -Turnips Nothing starchy!

Clean as you go
•••
Finishing dinner with your kitchen looking like the bomb squad failed to defuse an explosive while you were eating is no fun. If you have more fun, you’ll cook more. It helps to start with a clean kitchen (or at least sink) so you can actually clean as you go, and a bucket or bowl for scraps next to your cutting board goes a long way.
