I fill a freezer bag of food scraps, and when it gets full I boil it all in a big pot for an hour or so, season with salt or soy sauce, and strain it into jars and ice cubes trays to freeze.
Homemade stock is better and cheaper than store bought, and you can use it place of water for many savory dishes.
I sometimes see recipes call for specific ingredients, but I always use what I have around and it always works out. I think any of these in any quantity are fair game:
-Onion
-Carrot
-Garlic
-Celery
-Mushrooms
-Ginger
-Tomato
-Lemongrass
-Apple
-Herbs
-Turnips
Nothing starchy!
