DylanFirst to rec“Tepache is a sweet, bubbly drink made from fermented pineapple, with origins dating back to Pre-Columbian Mexico. It is believed that the earliest forms of Tepache were made either by the Nahua people of central Mexico or the Mayans. For the Mayans, Tepache was a sacred drink to which they would add different aromatics depending on its intended use. ~ (excerpts from de la calle) I initially learned about this delicious drink a few years ago when a friend offered me some she had made. The way it uses up food scraps (pineapple skins) that I'd otherwise throw out is so appealing to me. Tonight, I'm making it for the first time with a simple recipe variation consisting of pineapple skins, filtered water, brown sugar, a cinnamon stick, cloves & ginger. I've stirred all the ingredients in a large pot covered with a tea towel, and now I'm playing the waiting game :) It's recommended to leave it at room temperature to ferment for between 1-3 days! Once it's fermented to your desired taste, you remove any white foam, then sieve the solids, add any additional water or sugar (or booze!) if you wish, chill, and enjoy! Very excited to see how my first attempt goes...”
