Quick Pasta and Chickpeas Recipe

“I always keep the ingredients for this on hand for a quick dinner. I usually double the amount, and I don’t bother with the finishing oil. I also like to add a couple handfuls of frozen spinach to the pot while it simmers.”

“There's a pause in LA's heatwave which means you have to make Smitten Kitchen's chickpea pasta before it comes back. It's cozy and nourishing and delicious, and takes less than 20 minutes to cook. Don't skip the fried garlic chips! They're the best part 🧄”

“Another zero bandwidth, high reward dinner. Pure comfort and all things from my pantry.”

“Delicious, super simple, all-pantry-ingredient recipe that happens to also be vegetarian and kid friendly? A culinary unicorn. I originally found this via Dinner A Love Story; Smitten Kitchen's versions zhushes it up a bit with a fancy finishing oil but it is absolutely delicious just made simply and finished with parm. I usually use ditalini but macaroni works just as well; obviously style points if you have the spaghetti-O dried pasta.”

“Everyone should have the pantry ingredients on hand to make a basic lunch or dinner dish in a pinch or when things are rough. This is my go to.”
