    “I don’t think we need anymore crudos in trendy LA restaurants, we definitely need more people making them at home. Valentine’s day is a good excuse to make one, also— Tuna is an aphrodisiac (but so is salmon, so use whatever you want). Jazz it up with some really fatty tuna belly, citrus season in LA means you can use grapefruit or cara cara or blood orange or tangelos. The world is your oyster.”
