The lodge and on-site Hell’s Backbone Grill & Farm are run by chefs Blake Spalding and Jen Castle, whose advocacy for protecting Grand Staircase-Escalante and connection to the land make the whole place feel special. The food is ridiculously good — especially the Jenchilada.”
