    “I have a few different types of carbon steel pans. This is the best of the bunch. In terms of pans more generally, you basically only need a few pots and pans: Medium and Large carbon steel for high heat cooking and/or versatile sautéing. A Large dutch oven for braises A Small non stick skillet for scrmabled eggs or omelets. Buy it cheap and rotate annually. A Spaghetti / stock pot. 2-3 stainless steel medium sized sauce pans. None of these need to be fancy and buy them at homegoods when they are on sale.”
