Folded eggs with veggies

Sauté sliced mushrooms & kale in an oiled pan on medium-high heat Add a tiny bit of butter for extra (optional) flavour & season to your liking Whisk 2 eggs through a sieve into a lightly oiled pan on medium-high heat Shake the pan to loosen the eggs a little, then when they begin to cook (this will happen quickly), begin gently folding with a spatula Remove the pan from the heat just before the eggs are cooked to your preferred liking (they will continue cooking once removed from the heat) Top with crispy chilli oil & spring onion

make-ahead breakfast sandwiches

i am a fiend for egg and cheese on bread. i make this nyt recipe but leave out the bacon and add spinach and/or mushrooms. they reheat best if you defrost in the fridge the night before, but inevitably i forget so i just pull it out of the freezer first thing and let it warm up on the kitchen counter while i progress toward breakfast. makes my day every morning!

If you have them in the freezer truly it’s just the time it takes to microwave. Me and my work wife would go scout for tamale ladies in parking lots on the weekend then put a huge ziplock of tamales in our work freezer for last minute breakfasts. My favorite of all time is Rajas with poblano pepper, tomato and cheese. And yes I do make my own sometimes 💅 having homemade salsa prepped to put on top is a bonus but they really are amazing just as is.

Most minimal version is cucumbers and good crackers/toast with yogurt with olive oil maybe just salt and pepper or if you have a good spice blend like zaatar or I make a rly bomb dukkah. If I have it I’ll add tomatoes, olives, maybe a little lemon zest, jam or herbs. I’m also a savory breakfast person always looking for quick prep options.

it’s pretty fast to prep if you make rice ahead of time and very customizable. if you wanna be truly lazy just buy these salmon flakes and keep some furikake and kewpie on hand. and in a pinch don’t bother with the molds: invert a sandwich bag over your hand, spread a layer of rice on your palm, add in your filling to the middle and then flip back over the sandwich bag and squeeze it into a ball, you can roll it in furikake or save a step and just put everything in the middle (lol I hope these instructions make sense)

Bagel/English muffin: toast topped with avocado, smoked salmon, micro greens or arugula. Sun dried tomatoes in olive oil. Add a fried egg if you have time. It’s salty and healthy!
