Ireland is the perfect spring break trip with kids: We did this when our kids were 5 and 8! Ireland is fantastic for spring break for a million reasons:

flights are as cheap to go there as to fly to Florida or California for us (Chicago)

English speaking, so the kids made friends at playgrounds, ordered their own food, talk to other adults, etc.

Waterfalls, falconry, incredible hiking, ruins, castles, rocky beaches, lots of French fries, beautiful drives

Weather was actually beautiful at the end of march! We also stayed in hotels with pools so the girls could swim in case of bad weather

We made a small loop so we didn't have to be in the car too long - Dublin, Wicklow mountains, Kilkenny. We plan to go back to head to the western coast!

Italy & Japan: IMO both countries are very child-friendly. In Japan my little one fell asleep at dinner and the staff brought my daughter a pillow and blanket so she could sleep comfortably in our booth. In Italy, recommend getting some sort of pedometer so the kids can count steps. If they get tired, just take a gelato break.
