if cozy had a flavor profile, it’s within this lil cast iron pot notes of savory cinnamon & sage, slow-braised beef and veg, topped with mashed potato & béchamel?! are you kidding me?! I know we aren’t ready for summer to end but Good God, this alone has prepared me for oncoming fall and all of its glorious flavors & abundance. try Kava’s Moussaka yourself to soften the transition into summer’s end!

found this spot driving thru the darling Woodstock, VT on a work trip. despite a full lunch line as my witness, I so bravely asked if they sold their Sage Grape chicken salad by the pound (not listed beyond the sando on the menu) — just based on vibes I knew I would regret not trying to make Mon Vert my dinner as well… iykyk the owner, Sam, came out behind the counter, shook my hand, & so graciously negotiated with me for a pint container chicken salad! even with a line out the door, that kind of hospitality is hard to come by in a lunch rush definitely give their coffees a try and order some type of bacon sandwich — most delicious, thick, smoky bacon! menu is boasting local ingredients, too Mmm mmm Mmmmmmmm!

I feel like I’m showing all my cards with this one… but if anything deserves a Rec, it’s one blessed by our patron saint of culinary curiosity, Anthony Bourdain Himalaya pops up in Parts Unknown (season 8, episode 7) — and it would remain unknown because the strip mall that houses this hidden gem is completely unsuspecting for starters, I was raised on double-dredged, homemade KFC, fried in Crisco in a well-seasoned (preferably generational) cast iron Wagner skillet. I thought that was the magic. Of Course I was naturally suspicious, but holding no reservations (no pun intended). this Indo-Pakistani take blew my fucking socks off. A type of Chicken Wizardry transcends tradition. perfectly crunchy, deeply spiced and oh-so tender! this spot was graciously shared with me by clients while I was in Houston for work. one of them—a classically trained French chef—caught my face after the first bite and asked if I’d like to take a picture. normally I’d never stop a work dinner for that, but foodie to foodie… she knew. ***Restaurants like Himalaya are a reminder that American food is immigrant food—refined, reimagined, and remade with every wave that arrives. & maybe that’s what Bourdain understood better than anyone: the best American food has never come from standing still. it comes from people in motion—carrying recipes across borders, adapting them to new homes, and sharing them with everyone else delicious proof that America’s table has always been set by immigrants!***

O humble cauliflower! O blank canvas of veggie brains! I mourn every steamed floret I’ve endured til now! the kind of crisp that shatters like delicate pastry before melting in your mouth. trust me—as a Kentuckian, I’m deeply suspicious of anyone who throws around the word crispy sauce breakdown: Toum (Lebanese garlic sauce or paste made from garlic, salt, lemon juice, and oil) & Amba (pickled green mangoes, vinegar, and a blend of spices like turmeric, fenugreek, and chili)

Renée Erickson, James Beard Award Winning Chef table for one? I’d suggest grabbing a seat at the oyster bar perfect little corner for a view of the open kitchen, a chance to chat with fellow diners, and the kind fella shucking oysters! some of the best oysters to grace my gullet. the crudo is dare I say… incrudoble? & that wine list fux! delightful taste of Seattle & its maritime bounty ***worth acknowledging the recent labor strike. solidarity with the workers who make places like this worth returning to!***
