I buy this every time I go to Costco, it is surprisingly yummy given all the super healthy ingredients like kale, chickpeas, almonds and quinoa. I haven’t tried this recipe yet but it seems like it would be good.

Roasted eggplant & pickled cucumber

Add finely sliced cucumbers to a large jar with apple cider vinegar, salt, ginger, garlic, honey, fennel seeds, dill & shake. Top with boiling water and let pickle while you prepare the rest of the meal Preheat your oven to about 200 °C & slice the eggplant long ways in half & score the inside flesh in criss-crosses Add extra virgin olive oil, salt, pepper, garlic powder into the criss-crossed eggplant flesh & bake in a hot oven until it looks soft & juicy (about 30 mins) Meanwhile, toast sesame seeds & flaked almonds til lightly browned then mix Greek yoghurt, lemon juice, lemon zest & honey to make a sauce Top the eggplant with sauce & nuts Add a side of pickled cucumbers to greens of your choice & top with spring onions

Pesto rigatoni (gluten free!)

Blend basil, kale, toasted pine nuts, garlic, parmesan & a generous pour of extra virgin olive oil in a food processor Optional pesto add ins: add a little tang with some lemon juice or spice it up with some pickled jalapenos Cook pasta in heavily salted water until al dente (I used Rummo gluten free rigatoni) Reserve a little pasta water & mix into the sauce with a tbsp butter (optional) until it's a creamy consistency Serve with a generous sprinkling of parmesan & some extra toasted pine nuts

i make this a couple times a week and it's so quick and satisfying! not to mention anti-inflammatory and great for skin and hormone health ~ start with your favorite tinned fish, 1/8-1/4 cup rice, and 1/2 an avocado, mix well in a bowl with a fork ~ Next, mix in any chopped fresh veggies from your fridge (cucumber, peppers, carrots, celery, etc.) ~ Season with a dash of soy sauce, good quality sesame oil, and furikake ~ pair with a ferment like sauerkraut or kimchi, steamed greens with good salt, and some roasted seaweed ~ enjoy :)
