Robert Palmer patiently explains to the void“If you like garlic, toum is the dip or spread for you. Garlic, a little salt, lemon, and a little oil, blended until emulsified. Perfect on toast, as a pizza sauce base, or enjoyed on an individual Triscuit. Of course, no discussion of toum is complete without (a) an acknowledgement that Zankou Chicken's version is the canonical and best version, and (b) their specific garlic sauce has an unbelievably tragic backstory. Trader Joe's has a version, too, which some people think is pretty close to the Zankou version, but with less murder. My favorite is the Baba Foods version pictured below ... which is mysteriously absent from their website, and is suddenly giving me some anxiety that it will go away!”
