“Kolokithokeftedes aka Greek zucchini fritters. Made with feta, fresh herbs, and grated zucchini (a fun way to eat zucchini and forgo the squishy nature). Crispy on the outside but soft and full of flavor in the middle. A fav dish of mine year round! Don’t forget the tzatziki.”
