“I’m not saying you shouldn’t develop an interest in making your own BBQ, (that’s probably how the professionals get started, after all!) but expert BBQ people in a dedicated setting just do a better job making BBQ. Trust your BBQ place, be grateful it’s nearby, maybe make friends with the pit master.
