“My fancy friend Raf loved this salad so much I named it after him. I developed this recipe for the thinner pink and green varieties I was growing upstate but it works for any variety slice the stalkier ones thinner so they get coated with all the good bits. A refesh of what I think of as 60’s American fare. The marinated dates are winners on their own too.”
