Creamy Lasagna Soup

“5 reasons this soup slaps: (1) Cooks in one pot and (2) is even better if you just dump a full bag of baby spinach in. (3) If you add enough lemon it is reminiscent of avgolemono in a delightful way. (4) My finicky tween requests this. (5) Excellent way to use up broken lasagna noodles that wouldn’t work well in actual lasagna and fun to break the pasta into bits.”
