Sam Sifton’s Sourdough Waffle or Pancake Batter: I’ve made these sourdough starter waffles many times and they come out light and crispy, the pancakes come out fluffy, and they smell amazing because of the sourdough. Personally, I find it hard to have buttermilk on hand, but it is the ingredient that pushes this recipe over the edge.
