Sam Sifton’s Sourdough Waffle or Pancake Batter

I’ve made these sourdough starter waffles many times and they come out light and crispy, the pancakes come out fluffy, and they smell amazing because of the sourdough. Personally, I find it hard to have buttermilk on hand, but it is the ingredient that pushes this recipe over the edge.
