add peas to everything
•••
okay not everything, but a bunch of frozen peas is often the vegetal savior to a meal when you can’t muster the energy to grocery shop or cook. boxed mac and cheese? peas! instant ramen? peas! curry? peas! potatoes in almost any format? peas! one of my longtime go-to emergency meals is to treat frozen peas as if they are basil for pesto: boil some water for pasta. microwave a bunch of frozen peas (idk, maybe 1.5 cups for one person). using an immersion blender, blend up the peas with olive oil, salt, your choice of nuts/seeds, maybe some lemon juice or garlic. once your pasta is done, throw all that in the pot and mix well, with some pasta water as needed. boom! a pretty healthy meal with enough carbs to feed your exhausted soul.

best ever pavlova
•••
i have made many pavlovas in my time and this is the only one to come out perfectly crisp on the outside and perfectly marshmallowy on the inside, with zero collapsing or browning, every single time. is it more work than traditional? yes. will you remember how much work it was when you’re eating a delicious cloud topped with whipped cream and mountains of whatever fruit is in season? no you will not.
