Use a Rice Cooker

A rice cooker is hand's off and versatile. I use it to also cook farro, quinoa, lentils, and couscous. A quick online search will tell you the water proportions best for each grain, etc. I like to throw in some olive oil and salt. Variations include sometimes adding a bay leaf or sautéed scallions.

Get a beautiful piece of fish (wild salmon, halibut, something thick) and cut up some veg. Drizzle everything with olive oil, salt, pepper on 425. Dinner is ready in 15-20 minutes.

Soup is good food

Hear me out... it won't take 30 minutes to make, but will save you time in the long run. I will spend a Sunday making 2-3 large batches of soup and freeze into dinner size portions. Most of the time I forget to defrost and stick the frozen soup straight in a pot to heat up. Make a salad, toast some bread (or make some rice or pasta to add to the soup) and dinner is served.

These are fine without the lard, and his recipe in the Mexican Everyday Cookbook (highly recommend) has you add red chile flakes with the garlic instead of salsa. So delicious.

leftover chicken from the rotisserie chicken in the frig, shredded on top of crushed tortillas, can of refried beans, generous sprinkling of shredded cheese. broil. top with sour cream, salsa (from the batch of homemade salsa), chopped green onions if I have them.

These are an amazing snack or simple meal — both superfood-level healthy and insanely delicious. Link takes you to a recipe to make them at home; I also like to serve them hot, and top with butter and furikake when I do. This plus cucumber salad plus a scoop of rice has become my go-to work lunch.

This has been a go-to in our house for years. It’s so easy and delicious. We put a bag of frozen broccoli in the air fryer, and either make rice in the rice cooker or heat up a bag of frozen rice from TJs. I often double the sauce, but cut the brown sugar in half. Soooo good!

A quick one when I want something satisfying: sauté diced onions, lots of kale, cherry tomatoes (towards the end to keep their shape), season well w/salt, pepper, lemon. Pile it on a piece of crusty bread you toast in olive oil in the same pan, top with poached eggs. Very fast, very fresh tasting. As an aside, learning to poach eggs is like having an ace up your sleeve. Don’t be intimidated! There are a million video tutorials online, or just look to Julia Child… all you need is simmering water and a spoon. 😌 (picture shows unadorned poached eggs, delicious as well.)

So easy to make and such a satisfying meal. I just buy the curry blocks and then cut up onions, potatoes, carrots and add in other veggies like spinach and mushrooms and eat over white rice. So yummy!!

It’s straightforward and really delicious. People licked plates last time! Well maybe not but I was asked for the recipe by two of the guests which is either the best compliment or a really kind thing to do for a tired host. Th is recipe is also my favourite one.

This one is quick, cozy, and really tasty. Made this a lot with a new baby at home and we would double it, throw in some zucchini to up the veggie content if we felt like we needed it, and would doctor up a whole tub of yogurt to keep in the fridge. A fast dinner MVP and we looked forward to leftovers every time!

This is a 911 snack as well if I’m in pain and need carb + fat fast. TBH I just stuff the chz in while it’s warm, and eat the whole thing like a burrito. A lazy girl hack is buying pre-roasted Korean sweet potato’s in the frozen section at H mart, you just microwave them. Done.

This is a winner and so easy to throw together. I once made a pot of this, and while putting a jar of it in my fridge, my fingers slipped and the jar dropped and shattered in the fridge, broth and noodles and bits of pork and glass everywhere. I then shattered the glass fridge shelf while cleaning up. Anyway, it was a nightmare and so it kind of put me off the soup for a second. But even that traumatic memory couldn’t keep me away and it’s back in heavy rotation. It’s just that good.

boil up some mini-pasta shells, once cooked toss in a pan with some marinated artichokes, chopped tomato, red onion, a little marinara if you've got it (if not throw in some tomato paste with a lil veggie stock), and this is key Treeline cashew mozzarella that you've shredded.

The Basics: cooked shrimp, crunchy lettuce, chopped herbs, salty pickles, juicy tomatoes, sliced avocados & creamy dressing …all summer long.

Go out to dinner —is my actual rec on a Friday. But if you’re home, you might like to pretend you’re out to eat. So I’m remembering a time when I went to a friend’s house and she had a sheet pan of thick cut potatoes with rosemary waiting to go in the oven. She cast iron seared baby lamb chops in 7 minutes, and steamed broccoli without fucking it up. She opened a delicious red wine, and I was like…transported. So. Maybe let’s do that menu tonight.
