Uni flan from a closed restaurant in SF called “Skool”

I ate this in 2015 on my first visit to SF and didn’t even like uni at the time. Salmon roe on top, utter perfection. I still think about it, god how I wish I could eat it now that I love uni.

Sure, the reservation is impossible to get and I had just gotten engaged the day before so had a lick of rose colored glasses on. But my GOD the radicchio salad, the Lambrusco, the balsamic filled cappelletti, and the panna cotta with basil sugar will live in my bones long after I take my last breath
