What are your fav weekend cooking projects?

Question

Francis Lam's Weapons-Grade Ratatouille: Once a year, when all the produce is in season I spend ~5-6 hours lazily babysitting a pot to make this absolutely transcendent meal. I serve it with baguette and fancy cheeses to make it truly provincial. I also highly recommend The Splendid Table episode where a comedian cooks this and makes a video diary (episode 718: Things You’ve Gotta Try). It’s hilarious and also lets you know what you’re in for—a long haul journey to flavor town.

Noma Projects Summer Pickles: Weekend pickled veggies: the kind of low-effort kitchen move that pays dividends all week. Toss them into salads, pile them onto hummus or avocado toast, or sneak a few bites before a workout for a salty electrolyte bump. And doing a little favor for your gut while they’re at it

Steve M · Answer

J Kenji Lopez-Alt’s no knead pan pizza: It doesn’t require a full weekend to make but it’s nice to not be in a hurry and just saunter your way through making the dough and the sauce and prep and soon enough you have pan pizza.

Gloria · Answer

julia child’s puff pastry: I love love love palmiers and in my mind, making them from scratch only counts if you made the puff pastry. Julia’s recipe is delish, and making puff pastry is def a weekend event for me.
