
Blanc de Blancs (French for "white from whites") is, to me, the most elegant style of Champagne made exclusively from white grapes. In Champagne, this almost exclusively means 100% Chardonnay. Blanc de Blancs have crisp acidity, linear minerality, and delicate lemon, white flowers, green apple, and brioche notes. When aged 10-20 years they develop insane complexity with notes of buttered mushrooms, salted caramel, and the most delicious applesauce.
