Is it terrifying? Yes. Is it incredibly satisfying? Also yes. Does it take dozens and dozens of tries before you feel even remotely confident? Yes, and that's dozens and dozens of delicious oysters you and your fellow oyster-shuckers-in-training get to enjoy. I am not quite where I want to be yet (damn the stubborn ones!) but every time I get to practice I feel like I am getting better at a tiny but mighty skill.
