Lemonade without oleo saccharum is sour sugar water. Chef John (from foodwishes.com) introduced me to this incredibly simple yet life-changing method for making the definitive version of homemade lemonade. All it takes is peeling your lemons and leaving the peels in the sugar overnight to extract all that gooey citrus aroma and flavor! I re-used that same method to make lemon rosemary shortbread cookies last Christmas to rave reviews. Yes, rosemary oleo saccharum!
