another staple for vegetarian-forward recipes that don't feel like they're trying to replicate meat-based dishes. good for all levels of cooking, and so many you can twist and tweak to your preferences and delight (looking at you roasted cauliflower herb salad and broken pasta with ricotta and walnuts)

Six Seasons by Joshua McFadden

This book is split into Spring, Early Summer, Midsummer, Late Summer, Fall, and Winter and each section highlights vegetables that are in season at that time with the best recipes for them. We looove cooking from it and could not recommend more highly.
