“Cortez, Colorado is a cool little town almost exactly halfway from Salt Lake City (where I used to live) and Santa Fe (where I live now). I discovered Pueblo Seed Company there and fell in love. Everything they do is cool: growing regionally-adapted seeds, running a gorgeous weekend bakehouse menu, and making some incredible pantry goods. Their Rye Catcher cookies are my favorite alternative to an energy bar for a hike or errand-day snack.”
