“made this for lunch at the start of this week...nothing not to like: caramelized zucchini, a chewy little bite from the orzo, a little kick from the pepperoncini gremolata situation, some crunch from the walnuts. it keeps well in the fridge. i put this salad on a bed of dino kale for more greens.”
