“This recipe got me a handshake from two neighborhood kids. I make it once and do it in one big pan and enough for another small tray too (freeze this one for future me). Hard to make a vegetarian main dish everybody loves but this is IT. I use cottage cheese in place of ricotta (works great) and blend it with a bag of steamed spinach because the color is gorgeous.”
