Westville Kale Salad Copycat Recipe

“Recently figured out my favorite salad is stupidly easy to recreate at home as it has no cooked components. My formula: 80-100g of shredded kale, marinated with salt, pepper, vinegar and a little bit of olive oil (use your hands!!) 65-80g pickled onions which feels like a lot but is the real key to this salad 25g goat cheese or other soft cheese 15g pumpkin seeds 15g walnuts (Westville does candied but I prefer raw tbh) 10g dried cranberries or raisins Grilled chicken on top And that’s it!! I don’t like a lot of dressing so I typically don’t add anything else after I’ve marinated the kale, as the onions and cheese also help keep things not dry”
