“I know this is not a traditional swamp soup-- please don't come for me! It's more like a loaded tomato soup. It's very easy to make (like, weeknight easy), especially if you use a Chop Wizard to prep your veg, and the ingredients are relatively inexpensive. I use fresh mozzarella instead of Swiss, but otherwise I make it as written. As with most soups, it's even better reheated the next day.”
