Battersby Kale Salad: I haven’t lived in Brooklyn in 10 years but still dream about this salad. I have their cookbook and have made it, it’s worth the effort. An amazing mix of fried kale, Brussels sprouts, fresh herbs, and flavors.

Charlie Bird's Farro Salad: I make this once, maybe twice a year, when little tomatoes are in season at the farmers market, and it makes me so happy. The best detail is cooking the farro is apple cider. I go a little heavier on the fresh herbs than the recipe recommends, and I recently added some roasted chickpeas for the you know what (protein).

Crunchy salad, an ideal accompaniment for pizza night: We’re talking Williamsburg’s finest Leo’s Chopped Salad: Celery, Fennel, Carrots, Parsley, Sun-dried Tomatoes, Genoa Salami, Olives, Tomatoes, Chickpeas, Red Onion, Cucumber, Provolone, and Broken Oregano Vinaigrette. It’s tangy and salty and has the best crunch. Replace anything, but don’t skimp on the provolone (or the olives…or the fennel…) Notable alts: Cherry tomatoes, pickled peppers, basil, gouda, mozzarella, and ricotta salata.
