"Do you really need 15 note-taking apps or do you need to learn how to use the one already there?"
This hasn't really been updated in over a year but is still very good. I still reference it from time to time. It's not the most well laid out guide and there's still a lot of TBD videos that the author never put in but they're easily found on google. Obviously best set up on a Mac or iPad + keyboard rather than just an iPhone.

Apple Notes

“How do I love thee, Apple Notes? Let me count the ways. Pinned. Tagged. Smart-Foldered. Back-Linked. Synched. Shared. iClouded. The list goes on! I might have to teach a class for all my note-takers and list-makers on the many unsung features of this seemingly basic app!”

“Whoa. So Apple Notes can also act like a (cleaner, more aesthetic) Excel *and* a graphing calculator? Life changed.”
Dominique Generaux
“Picture your usual route in the grocery store. Make a Notes App list in the order you walk in. This makes it less likely you’ll double back. This all goes to hell if you pop into a strange grocery store, but makes a regular weekly shop easier.”
