I know this recipe by heart and eat it at least twice a month. Swap the butter for veg oil of your choice, broth can be water. I usually omit the cilantro/green onions for simplicity's sake and will sub a can of crushed tomatoes if I don't have time to go to the store for fresh ones. I usually only use half a can of coconut milk but adjust to your taste. Delicious and satisfying!
