Celery Salad a la Daytrip

I don't think Daytrip makes this salad anymore (but their chicken is still so so good), and I never actually got to try the original, but I love this. Salty and refreshing and if you take the time to make the lemon verbena oil, transcendent (but I am lazy and sometimes just use some nice olive oil)
