Potato Party recs needed! My husband’s sole request for his 50th bday is to have a party in honor of his favorite food: the humble potato. It’s gonna be a potluck, but please make recommendations for a main/central dish that has protein in it, as well as tips for how not to end up with a beige buffet

My city has a specialty produce store with lots of exotic produce, including cool varieties of potatoes! If you can find something like it near you, you can make some of your recipes with potatoes that are purple, blue, etc to avoid being all beige. There are also potatoes with weird shapes!
