Freezing veggie scraps for stock

I love making my own veggie stock from scraps! I make mine in a pressure cooker set for 10 minutes. Whatever veggies I’ve saved plus salt, garlic, bay leaf, and sometimes kombu or dried mushrooms. For best results, avoid brassicas and woody herb stems!

In all sincerity, this is my #1 kitchen hack. It’s resourceful, cheap, and the result is so flavorful and nourishing that you will never reach for that Better Than Bouillon again.
